I made a trip there today to get sausages, bratwurst and franks,

To my surprise, the buffalo meat was super fresh red:

As usual, I broil and then bake my roasts:

Doesn’t this just look TOTALLY TASTY?  I cooked it rare, since I was told buffalo meat is leaner and tends to overcook.

Here’s my dinner… (btw, it tasted really good)

  • Meat: Buffalo and grilled onions
  • Pasta: Organic linguini (Durum semolina)
  • Sauce: Roasted portabella mushroom pasta sauce + extra mushrooms
  • Salad: Mixed greens + Focaccia garlic croutons + pine nuts
  • Condiments: Mustard + creme horshradish
  • Drink: soy milk

Hungry Cactus verdict: A
Buffalo meat is lean, but still has the great meaty gamy taste.  I like this new taste.

Wow, your plate of food looks awesome!

Do they raise buffalo in NM?? I bet the meat is even better fresh from Montana!

Perhaps the best prime rib I’ve ever had was a bison prime rib at Ted’s Montana Grill.
